The artisans of the CLAUDE DOZORME workshops manufacture the couteain France a cleaver from the HAUTE CUISINE collection.
This knife, with a blade made of very high-end X50CrMoV15 steel, will allow you to cut bulky foods, large pieces of meat; but also to break the bones of pieces of meat that are very hard to debone. You can also cut and chop with great ease.
Its high quality blade is very sharp and very easily resharpenable thanks to the very precise grinding. The polished-matt blade goes all the way to the end of the handle for even greater strength. The Rockwell hardness is between 54 and 56 HCR. The sharpness of the blade is "razor".
The balance between the handle and the rest of the knife is ideal. The grip is safe and ergonomic. The guard is made of solid stainless steel.
