Composition:

The handle of this 20cm carving knife is made of Micarta, a very durable and easy-to-clean material. It combines very thin layers of linen in different colors compressed together with a resin and then polished to a mirror finish.

Through-through stainless steel rivets provide even greater strength.

The blade is made of French, nitrogen-strengthened 4116N stainless steel.

The blade is corrosion-resistant and retains its sharpness for a long time, even after intensive use. Each knife is designed to withstand the rigors of daily use and to last over time, making it a lasting investment for your kitchen.

Its hardness index is 58-60 HRC.

Use: 

This knife has a straight blade with a raised point, borrowed from a Basque style called Yatagan, and is perfectly suited to cutting all types of beef and poultry.

Its rigid blade and raised point provide excellent penetration as well as a clean and precise cut without tearing the meat fibers.
