You can use it to bake sponge cakes, puff pastry, shortcrust pastry, tart bases, pizzas, etc.
The baking sheet has perforations that are designed and placed to allow hot air to pass through.
Perfect for high temperatures, the sheet is blued on the surface by a heat treatment: temporary protection against oxidation; no non-stick coating. Excellent heat transfer: facilitates the Maillard reaction for golden and crispy pastries.
