For a successful bake, we recommend carefully spreading the pastry in the ring, then pricking the base with a fork, for example. Then leave the mould with the pastry to rest in the fridge for 30 minutes (during the preheating of the oven to 210°C or 410°F). Next, place baking paper in your mould on which you put lentils, clay beads, or beans over the entire surface of the pastry to prevent it from puffing up. We recommend 15 to 20 minutes of baking at 150°C.
