This de Buyer cannélé mould conducts heat perfectly, so you can achieve perfect caramelisation. You will find it easy to get the cannélés out of the mould after cooking, and even when freezing as low as -70°C and heating as high as 300°C it still works perfectly. 

Your traditional Bordeaux cannélés will be cooked in a uniform manner. The angles of the mould are precise for excellent aesthetic results. Patented and made in France, the Elastomoule material contains no peroxide or solvents, and is naturally non-stick. Elastomoule has been endorsed by members of the Meilleurs Ouvriers de France (Premier French Craftspeople) and champions of the Coupe du monde de la pâtisserie (Patisserie World Cup).

This top of the range mould needs to be greased upon first use with melted butter or oil. Ideally you should place the mould on a rack rather than a tray, for better heat convection. Do not use the oven's grill function. The mould should not be baked with empty sections.

The mould is suitable for dishwasher use, but repeated cleaning in the dishwasher may dry out the cooking sections. To rectify this, simply lightly grease the mould again.
