De Buyer Elastomoule Madeleine Mould , 30 sections with a traditional shape. This unique silicone mould contains micro-bubbles and powdered metal for perfect heat conduction.

This de Buyer madeleine mould conducts heat perfectly. Measuring 20 x 30cm, it can cook up to 30 madeleines at once. The composition of the material means that it is very easy to get the madeleines out of the mould after cooking. Even when freezing as low as -70°C and heating as high as 300°C it still works perfectly. 

Your madeleines will be evenly cooked and beautifully golden. The angles of the mould are precise for excellent aesthetic results. Patented and made in France, the Elastomoule material contains no peroxide or solvents, and is naturally non-stick. Elastomoule has been endorsed by members of the Meilleurs Ouvriers de France (Premier French Craftspeople) and champions of the Coupe du monde de la pâtisserie (Patisserie World Cup).

This top of the range mould needs to be greased upon first use with melted butter or oil. Ideally you should place the mould on a rack rather than a tray, for better heat convection. Do not use the oven's grill function. The mould should not be baked with empty sections.

The mould is suitable for dishwasher use, but repeated cleaning in the dishwasher may dry out the cooking sections. To rectify this, simply lightly grease the mould again.
