Each collection has its own characteristics ;

- The thickness of the cooking utensils:

Depending on the thickness of the utensils, the heat distribution will take more or less time, it is a real issue when selecting your cookware.

If your frying pan, saucepan, cocotte or other is 1.5 mm thick, the heat transmission will be faster. On the other hand, the thicker the utensil is (about 2.5 mm), the slower the heat transmission will be.

Hopefully, thanks to technical and technological progresses, new manufacturing processes are born using new materials.

- Material selection:

It is true that thickness is important for heat transmission but materials are even more important.

Remember your first chemical lessons at school and the importance of the metals used according to the conduction potential; it is the same for your utensils.

Copper :

From a technical point of view, copper is a pure metal which means it is not an alloy of different metals. Copper is a very good and fast heat conductor. Therefore, it is a good choice to save time and energy. Copper also offers antibacterial activity and will help you keep your preparations healthy. (Do you know that in some warm countries, milk is kept in copper basins in order to avoid the milk to go sour too quickly?).

However, copper is capricious and needs a lot of attention. Cooking very acid or salty food in a copper pan is very difficult because of oxidation. Stainless steel :

Stainless steel, as it is called is a specific alloy created to be “stainless”. Mauviel has its own stainless steel manufacture and supply chain. This metal alloy is composed of 10% nickel for certain types of stainless steel. Mauviel uses the purest and higher quality nickel which comes from New Caledonia. It guarantees a high-performance, durable and safe stainless steel.

Stainless steel is much appreciated because it does not alter the organoleptic properties of the culinary preparations. Stainless steel is perfect for simmering or soft cooking. As copper is definitely a better heat conductor than stainless steel, it is associated with other metals such as copper or aluminum to overcome this problem.

Aluminum :

- Collections, one by one :

§ M’Cook : Stainless Steel :

The M’Cook collection, like the M’Heritage collection, offers several ranges, 3 in total. The only difference between the 3 is the finish: stainless steel cast iron finish for the M’Cook range, cast iron electroplated finish for the M’Cook c2 range and bronze finish for the M’Cook b range.

For these collections, utensils are made of stainless steel or non-stick coating.

The major difference

The 2.6 mm thickness is the same for all the ranges, the cooking methods are different and depend on the utensil you use.

The M’Cook range’s main asset is that it offers encapsulated 5-layer utensils. It means that the 5 layers are distributed both in the bottom and on the sides of your utensils, enabling excellent repartition of the heat.

For non-stick coating utensils, the cooking has to be slow. Do not sear the food but cook slowly. For the whole M’Cook range, the heat distribution is good and prevents from overcooking.

§ M’Pure : high thickness and non-stick coating.

This range has been created for slow cooking without adding fat. Thanks to its non-stick coating, it is an perfect range when you appreciate cooking delicate products such as fish, vegetables and others…

Moreover, the aluminum coating provides great heat conductibility and repartition. It prevents from overcooking your food. This range is not suitable for searing meat or other kind of food.

To preserve the integrity of your M’Pure cookware, prefer wooden or silicone utensils. Non-stick coatings deteriorate beyond 220°C so use your collection for slow cooking only.

§ M’Héritage : Copper (90%) and Stainless steel (10%).

The M’Héritage collection is composed of 4 ranges, the M’250 collections and the M’150 collections. How can you see the difference? It is very simple: the M’250 collections have a 2.5 mm thickness and the M’150 collections a 1.5 mm thickness.

This difference is the main aspect which will help you make your choice.

- The M’250 collections (« b » and « c »): 2.5 mm thick cookware are more robust, they better store heat for a more homogeneous repartition thanks to the stainless steel interior.

- The difference between M 250b and M 250c is the finish. The first one has a cast iron electroplated finish while the other one has a bronze finish. The difference is mainly aesthetic.

- In the two ranges M’150 (« s » and « c »), the cookware are 1.5mm thick, they are perfectly adapted for fast cooking and you will save time and energy. Thanks to your M’150 products, you can cook faster and sear your food.

- The other difference between the two ranges M150s and M 150b is the finish, a stainless steel cast iron finish for the M’150s range and a bronze finish for the other. It is up to you!

§ M’Passion : raw or tinned copper:

The M’Passion range has been created specifically for pastry lovers. Amateurs and experts will be delighted to cook with their M’Passion cookware.

Made of bare copper, these utensils are as pure as possible in order to respect the work of the pastry maker. The thickness is 1 or 2 mm and the style of the M’Passion collection is very sophisticated. You will enjoy cooking with pastry masterpieces. § M’Stone : Aluminum induction :

The M’Stone has a non-stick coating and is a collection which will last over the years. Its black anodized exterior gives it a very personalized style. Thanks to the Eclipse patent, the M’Stone range is very resistant to abrasion and shocks and has a long durability if you take care of it of course. Its non-stick coating is not suitable for high temperatures. Beyond 220°C, the coating deteriorates. If you respect these rules, you can use this collection very regularly and without any problem.

Your collection, with a 3 to 4 mm thickness, is designed to distribute the heat homogeneously and is perfectl suitable for delicate food.

Your utensils are also ergonomic; you can stack them easily and save space in your cupboards.

§ M’Urban : Magnetic stainless steel:

Because of its lightness and easy handling, the M’Urban collection will become your daily partner. It is adapted to all kind of heat and its heat transmission is very fast thanks to its 1.5 mm thickness.

But be careful, as they are smaller, it obviously reduces their volume. Water will boil more rapidly for example.

- Cleaning and care:

Now that you are aware that each collection is made of its own material and that each material has its own characteristics, we would like to inform you about the specific cleaning and care methods for each material.

Let’s start with Mauviel star material :

Copper:

As indicated earlier, copper is fragile and cleaning is not easy if you want to preserve its color, cooking qualities and conductibility.

More often used for cover than for the interior of your saucepan, frying pan or other, copper is very demanding in terms of cleaning and care.

For tinned utensils, tinning is compulsory at least every 2 years or even every year if possible to conserve the integrity of the product. Moreover, using metal tools is not recommended, use wooden or silicone utensils.

It is also not recommended to wash your utensil in the dishwasher or with an abrasive sponge, simply use soapy water which will not damage copper. You could also use the Copperbrill paste which will restore the shine of your copper and erase the traces without any difficulty.

Aluminum :

The cleaning and care of aluminum is very easy, it is one of its advantages and aluminum is rust-resistant. You can keep your cookware for a very long time with a minimum care.

On a daily basis, use a soft cloth with a little liquid dish or some lemon juice mixed with salt for tough stains.
