The blade is 26.5cm long and made of 13 layers of stainless steel. It is forged in Japan by master knife makers for unrivalled cutting performance and extreme hardness. In accordance with the Sashimi tradition, the blade is honed on only one side for exceptional cutting precision. To improve its precision still further, de Buyer have added a slot in the blade for your finger, so you can press closer to the cutting area.

Full of innovative touches, this knife has a carbon fibre handle to make it lighter and more ergonomic.
